If you elect to fry your Thanksgiving Holiday turkey, the Wichita Fire Department wants to remind you to use extreme caution. A turkey partially wet or completely wet, and immersed in a pot of hot oil will produce a volatile reaction. This reaction may be great enough to cause the oil to come in contact with the open flame and cause a large fire.
The department also recommends the following safety suggestions.

Regardless of the weather, never attempt to fry a turkey inside your home, garage or on the deck.

Keep your skin covered when inserting the turkey in the pot or removing it.

Never attempt to fry a turkey without using an instant-read thermometer to insure proper temperature.

Keep children and pets away from the hot oil.

Do not consume alcohol during the cooking process.

Provide a fire extinguisher.
